The Art of Bon Bons - Technique Class 5/9/26

In this demonstration chocolate bon bon class, students will learn the foundational techniques used to create professional-quality filled chocolates. We will cover how to properly temper chocolate for a smooth, shiny finish and clean release from molds, as well as how to shell and cap bonbons for a polished final product. Students will also be introduced to the basics of ganache, including how to create a stable emulsion, balance flavors, and layer fillings for texture and complexity. During the demonstration, I will walk through key techniques such as preparing fillings, piping and layering components, and troubleshooting common issues. Together, we will create four gourmet flavors each designed to highlight different skills and flavor profiles while giving students a well-rounded introduction to artisan bonbon making.
