Spring in Appalachia is subtle, and this class honors that quiet shift with simple, early-season food cooked with intention. We will cook wilted spring greens, a smooth asparagus soup, and classic skillet fried chicken. We will end on a sweet note with a variation of chess pie by making it into a fried pie! Every dish is practical, rooted, and deeply familiar. Appalachian spring is traditional and fresh!
